Soak wings for a few hours in 2tbs sherry vinegar, 2 tbs white vinegar, 3 tbs Ranch seasoning, then steam them for 12 minutes. Place in a single layer on a baking sheet and loosely cover with a paper towel and let them hang out over night.
Take them out the next day, preheat the oven to 375. Make the sauce: 3 tsp white vinegar, 1.5 tsp Sherry vinegar, 3 tsp Flaky sea salt, 1 tsp Granulated sugar, 2 tsp ranch seasoning, toss in the chicken wings. Pro tip MAKE EXTRA SAUCE FOR DIPPING. Place on a wire rack on a baking sheet, bake for 20 minutes, turn bake another 20. Last brush with extra sauce and broil each side for 1-2 minutes.
